Tomato Pie

Ingredients:

4 tomatoes, peeled and sliced

10 fresh basil leaves, chopped

1/2 cup chopped green onion

1 (9-inch) prebaked deep dish pie shell

1 cup grated mozzarella

1 cup grated cheddar

1 cup mayonnaise

Salt and pepper

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil and onion in pie shell. Season with salt and pepper. Combine grated cheeses and mayonnaise. Spread mixture on the top of the tomatoes and bake for 30 minutes or until lightly browned.

Cut into slices and serve warm.

I make it more frequently in the summer when vine ripened tomatoes are plentiful. It goes with lots of different meat dishes and is always a hit at potluck dinners. My husband thinks it's the greatest thing since sex. **gg**

Ahh, gross!! My mother made one of those once, only with green tomatoes. I still have psychological scars from realizing it wasn't apple.

I made one this summer for the Yankee and he has developed a prediliction for it. Still can't get him to go for grits, though.
